That’s a Lovely Wrap, Links & An Easy Apple Tart

Happy weekend everyone! I’m so happy it’s Friday because I get to relax this weekend. No appointments, no weddings, no home searching, nothing but relaxing and curling up on the couch with a good book and a stack of magazines to leisurely read…and a Sunday morning  trip to my favorite French cafe here in San Diego. The owner is from France and makes the most delectable tarts and buttery croissants. It always remind  me of the cafes in Paris that I love. If you are in Encinitas check out Isabelle Briens French Pastry Cafe. Get there early, by afternoon all the goodies are gone. I always try to make her speak to hear her accent {smile}.

Elephantine

With thoughts of Parisian bakers on my mind I went in search of an easy tart recipe to recreate at home…and folks it does not get any easier than this. Just four simple ingredients! I found it on the beautiful blog Elephantine. How amazing does this tart look? Trust me you can’t get this one wrong. 

Easy Apple Tart (serves 2)

1/2 medium-sized apple, sliced thinly
1/4 cup brown sugar
juice of 1/2 small lemon
1/2 frozen pastry sheet

1. Remove frozen puffed pastry sheet from freezer and let thaw for about 20 minutes, or until easily unfolded.
2. Preheat oven to 415°F.
3. In a mixing bowl, combined apple slices, brown sugar, and lemon juice. Toss. Let sit for 5 minutes.
4. Unfold the puffed pastry sheet, cut in half, and put the unused half back in the freezer (or, double this recipe and use the whole sheet).
5. Lay apple slices in a straight line, overlapping slightly.
6. Bake for 15-20 minutes on a parchment-lined baking sheet. When done, the pastry will be puffed and golden brown. Top with powdered sugar and serve with a scoop of your favorite vanilla ice cream.

  • Your success genuinely makes me happy but your new Mac Book Pro makes me jealous!
  • Finding a mentor is tricky.
  • My husband is a intelligent nerd wrapped up in a handsome face.
  • Getting to bed early is overrated especially when you’ve got an ass pile of things to accomplish.
  • I need to take more naps naps because of #3.
  • You have to do what makes you happy even if it means moving again.
  • It’s OK to have a little OCD. Someone needs to double and triple check so why not have one person do it all?
  • Passion is important…in your life, marriage, work, and within.
  • That we are all …no matter our upbringing, race, status, nationality, or beliefs… more alike than not.
  • That fear is crippling and enough of it can prevent you from soaring.
  • It’s OK to laugh at yourself to the point you can’t stop laughing.
  • There is no distance between friendship.
  • Spandex is not everyone’s friend.
