Pears are one of my favorite tree fruits. Their grainy texture, heartiness, and pure deliciousness make it one of the most versatile fruits to cook with in my opinion. You can enjoy pears in cocktails, grilled cheese sandwiches {seriously this was incredible!}, and as seen below salads. Anything that is simple and delicious is what I prefer. Especially if I am not cooking for a group. This recipe is easy, takes little work, and will make you look like you are an ace in the kitchen in twenty minutes! You can thank Domino for sharing this incredible recipe. BTW have you ever had parmesan cheese like this? It gives the salad a nice crunch…and it is so easy to do from home. You can add that to salads or just munch on it as a snack with fruit.
Ingredients
{Serves 6}
1 tablespoon extra-virgin olive oil, plus more for dressing
2 pears, each cored, stemmed and cut into 16 slices
6 to 8 cups mixed greens
vinegar
salt and pepper
1 cup grated Parmesan
1 teaspoon flour
Directions
– In a nonstick pan over medium-high heat, sauté pears in batches with olive oil.
– Cook until lightly browned, about 5 minutes per batch.
– Spoon warm pears onto greens. Drizzle with vinegar and olive oil, and season with salt and pepper.
Extra Credit
– Combine Parmesan with flour. Using a nonstick skillet over medium-high heat, sprinkle a thin layer of the mixture into 2″ to 3″ circles in the pan.
– Cook as many as will fit, leaving some space in between. When they begin to sizzle, and the underside is golden, flip and cook until other side is golden. Remove from pan and let it cool on the plate, and then add to salad.
